Diet coke chicken recipe

Another favourite for us is diet coke chicken. I love that you can mix it up with whatever veggies you have in the fridge! It also freezes really well so great for batch cooking.

- Labour of love: ready in 30-60 minutes
Ingredients
Fry light
1 onion, finely chopped
1 red pepper, 1 yellow and 1 green pepper, chopped into chunks
2 garlic cloves, finely chopped (or two tsp of lazy garlic)
4 skinless chicken breasts, cut into pieces
2 tsp Worcestershire sauce
4 tbsp tomato purée
8 tbsp passata (I use the one with extra garlic. No kisses for me!)
1 tbsp dark soy sauce
1 tsp dried mixed herbs
330ml can diet coke
200ml chicken stock
200g sugar snap peas
Method
1. Using a large pan, spray with fry light and turn onto a high heat.
2. Add the chicken, peppers and onion and stir-fry for 4-5 minutes, or until lightly browned.
3. Add the diet coke, stock, passata, tomato purée, garlic, Worcestershire sauce, soy sauce and dried mixed herbs and stir well. (I’m not going to lie, it doesn’t look great at this stage but trust me … persevere)
4. Bring to the boil, cover, reduce the heat to medium-low and simmer for 12-15 minutes.
5. Add the sugar snap peas, stir and increase the heat to medium-high.
6. Cook for another 10-15 minutes, or until the chicken is cooked through and the veg is tender.
7. Serve with rice, jacket potato, new potatoes or salad! Delicious
